Crafted from White Trebbiano Grape Must, our White Peach Balsamic undergoes the traditional cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized, thus maintaining its white color. The result is a crisp, slightly sweet vinegar that evokes the artisanal vinegars of northern Italy. It's highly versatile and can be paired with any of our Extra Virgin Olive Oils or flavored oils to create a light, tart vinaigrette.

FLAVOR: Delicate and sweet, reminiscent of fresh peaches

COMPLEMENTS: Salads, fruits, pork, fish, seafood

OIL PAIRINGS: Arbequina, Arbosana, Basil, Chipotle, Garlic, Harissa, Hojiblanca, Lemon, Picual, Wild Mushroom

IDEAS:

- Marinate sliced cucumbers, then season with sea salt and fresh ground pepper.

- Mix with Basil or Meyer Lemon oil for a delightful salad dressing.

- Blend with Garlic, Harissa, or Chipotle oil to marinate pork tenderloin or chicken.

- Infuse into bottled water or sparkling mineral water for a refreshing drink.

    I have been using Summer Peach as my sole salad dressing for several years. It enhances every salad I have ever tried it on. The fresh taste and slightly sweet addition is just what a salad needs. Recently, a Con’Olio person suggested I add Jalapeño infused Olive oil. When I did I was surprised that the spicy and slightly tangy taste was a welcome Addison to my summer peach. Now I carry both in my purse, so that I will have my own low cal dressing whenever I want a salad.

    I love the peach balsamic vinegar, it makes anything you put it on taste fresh and summery. I enjoy the vinegars I order mainly on my toss salads at dinner time but have found that if I enjoy the flavor of the vinegar, I can use it on most any food item and it will enhance the flavor.

    I'm in love with this vinegar. Can drink with some ice water and has a smooth peach taste.

    This is my new favorite thing! I have been mixing the peach balsamic vinegar with sparkling water to create a refreshing mocktail. I'm already making my way through my second bottle. It's a fantastic product!
