Olive Oil Chocolate Chip Cookies

Ingredients:

2 1/4 cups of unbleached flour

1/2 teaspoon kosher salt

1 teaspoon baking soda

1/2 cup Mandarin Orange Olive Oil(can substitute with a mild single varietal, lemon, persian lime, blood orange, butter olive oil)

1 cup packed brown sugar

1/2 cup of granulated sugar

2 eggs

2 tsp of pure vanilla extract

1 package of semi sweet chocolate chips

Heat oven to 375

Combine flour, baking soda and salt in a medium bowl. Combine the sugars, olive oil and vanilla and then beat in the eggs one at a time then gradually beat in the flour mix. Last stir in the chocolate chips. 

Roll the dough into small balls with your hands and place on a lined cookie sheet

Cook between 10-12 minutes until lightly brown. Allow to cool
