Citrus Salad

Ingredients:
2 Oranges
2 Blood Oranges
1 Large Grapefruit
6 Mandarin Oranges
3 Mango
Fresh Mint
4 Tablespoons of a citrus olive oil like, Lemon, Blood Orange, Mandarin Orange or Persian Lime
2 Tablespoons of champagne vinegar
2 Teaspoon of local honey
Add the oil, orange juice, honey, vinegar to a jar and shake to emusify.
Carefully cut off the peel of the oranges, grapefruit to remove the pith, then slice to your desired thickness. Peel and slice mango. Layer the fruit on a plate and drizzle with some of the dressing and top with the mint leaves.
