Balsamic Carrots

Ingredients:

1 pound of carrots, peeled

1/2 cup of extra virgin olive oil. We love Garlic or any medium Single Varietal here. 

1/4 cup of balsamic vinegar. We love, fig, traditional, black cherry, neapolitan herb

sea salt

ground pepper

Optional add on-fresh herbs, shallots

Preheat oven to 375.  Drizzle carrots with the olive oil and sea salt, black pepper. Toss & bake around 40 minutes.

During the last 5-7 minutes of cooking, drizzle your favorite balsamic on the carrots and let caramelize. Watch closely so they do not burn. Finish with any fresh herbs of your choice. Enjoy!
