Tabatha's journey into olive oil and balsamic vinegar began with wanting to bring the flavors of European markets to her home in Austin, Texas. Transitioning from a 20-year career in IT, Tabatha earned her professional olive oil tasting certification from the prestigious Organizzazione Nazionale Assaggiatori Olio di Oliva, launched the first premium olive oil tasting bar in Austin, and founded a company that sources olive oil and balsamic vinegar from ethical producers around the world. In addition to traveling and cultivating relationships with global producers, Tabatha has been hosting tasting classes for over 15 years. "I love to watch people's faces and hear their feedback once they've tasted a fresh extra-virgin olive oil for the first time," she says. "It's life-changing and the reason I do what I do."
