Olive Oil has been at the heart of the Mediterranean Diet for thousands of years. The Greek poet Homer referred to it as "liquid gold." But today, it is a premium global commodity treasured on all continents partly for its historical mystique but predominantly for its healthful benefits and seemingly endless culinary uses. According to recent medical studies, Europeans who consume Extra Virgin Olive Oil (EVOO) daily live longer lives and have lower incidence of heart disease, cancer, diabetes, and other diseases than Americans. The beneficial health effects of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidant substances (called Polyphenol). Studies have shown that EVOO offers protection against heart disease by controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. No other naturally produced oil has as large an amount of monounsaturated fatty acid as olive oil - mainly oleic acid. In addition to the health benefits, Extra Virgin Olive Oil is also great tasting! Olive oil is the only oil that can be consumed as it is - freshly pressed from the fruit. Americans in general are just not that familiar with the wonderful flavor of EVOO because of their very limited exposure to high quality fresh olive oil. Like wine, EVOO has an entire taste palate of flavors quantified in the following Olive Oil tasting wheel:
